With the goal of improving their knowledge and promoting their growth, the Scuola dei Mestieri was founded in 2010: a proper training school, aimed at perfecting professional skills for those working in the traditional fresh products aisles. From bakers to pastry and pizza chefs, from deli operators to butchers and fishmongers, and many others.
COURSES AND TRAINING
An intensive, accurate and professional training course. Scuola dei Mestieri offers all Finiper Canova Group business units a rich calendar of theoretical and practical courses to teach production and processing, as well as knowledge on traditional fresh products ingredients, and numerous basic sessions on the fundamentals of each aisle, as well as advanced training to improve production efficiency and client management skills, to raise the overall bar of professionalism. A professional, highly-qualified school focused on traditional trades such as bakers and butchers. A training space for practical and functional needs of every department, with a bespoke teaching programme aimed at consolidating skills both for product developers and for industry-specialised staff.

NEW MARKET NEEDS, NEW COURSES
The programme revolves around all reference market courses, with a particular focus on Floor Service sessions, which will become part of the learning programme of Scuola dei Mestieri for the first time. The training plan has been expanded to include courses that are in high demand in the Food Service sector. Participants will have the opportunity to broaden their knowledge thanks to external industry experts who allow off-site learning sessions on our partner suppliers' premises. All these activities are geared towards benefitting from highly-specific training experiences that contribute to the development of skilled professionals.

COHORT 2023 IN NUMBERS
The 2023 edition of the Scuola dei Mestieri achieved astounding results with 560 Iper partners and more than 83 training sessions, among which: 26 sessions on baking and pastry-making; 17 sessions dedicated to the art of deli; 8 sessions on the fishmonger sector; 12 on cheeses and cold cuts; 12 food service courses; 5 on butchery; 2 on pizza making; 1 on QA and gluten free foods.
As for the Rom'antica partners: 109 participants over 40 training sessions on Roman-style pizza making, how to knead it, fill it and bake it in the right oven.
As for the Portello Caffè partners: 119 participants over 8 courses on all things coffee, its secrets, latte art and coffee machines.
